53-501.16 (A)(2) Maintain TCS food at 41 F or below./// Crab cakes (46F) in the RI (salad) maketable cooler on the line next to the fish fryer was out of temperature. Ambient temperature 46F. PIC states that crab cakes were put in the cooler this morning. Crab cakes were returned to the WI cooler to re-chill. Cheesecakes (49F) in the make table was discarded. Do not use the RI maketable cooler for TCS foods until it has been serviced and can maintain 41F or below.
44-302.13 (B) Provide an irreversible registering temperature indicator for measuring the utensil surface temperature in hot water mechanical warewashing operations (Glass maximum registering thermometers are prohibited)./// Facility doesn't have an irreversible thermometer or heat strips for the heat sanitizing dish machine.
14-602.13 Clean non-food contact surfaces of equipment as often as necessary to prevent accumulation of residue./// Fans inside the RI cooler and feezer next to the fryers have ice built up on them. The fans will not circulate from the ice blockage. Fans need to be defrosted immediately.
