13-304.12 Store between-use utensils in running water if used with moist food such as ice cream or mashed potatoes. The scoop for the mash potatoes is stored directly on top of the lid for the food pan.
44-302.14 Provide an appropriate chemical test kit that accurately measures the concentration of sanitizing solutions. Unable to locate the (chlorine &/or QA) test strips.
14-202.16 Provide smooth, easily cleanable nonfood contact surfaces (damaged gaskets on RI units, ice machines, chest freezer lids, damaged shelving, etc.). The gaskets on the RI (4-door) prep cooler are in bad repair.
16-303.11(A) Provide at least 10 foot candles of light at 30 inches from floor in WI refrigeration units, dry food storage areas, and in other areas and rooms during periods of cleaning. Too dim inside the RI storage cooler (<10ft.) candles of light.
