5	3-501.16 (A)(2) Maintain TCS food at 41 F or below.// Cut tomatoes, cooked ground beef, and cheese were all ranging between 44-50 F. The PIC discarded and replaced the items with food items in temperature (COS). When the cooler was tested with my irreversible thermometer the reading was the same as their ambient thermometer (38 F). There is no problem with the cooler and the establishment was informed to keep the lid down and to also make sure the food is in temperature before placing it in the RI prep cooler.
4	6-301.12 Provide paper towels or a continuous towel system that supplies the user with a clean towel at each handwashing sink or group of adjacent sinks.// There were no access to paper towels at two of the hand sinks in the kitchen area. The PIC voluntarily provided paper towels at both when informed (COS).
