53-501.16 (A)(2) Maintain TCS food at 41 F or below./ Shredded lettuce and coleslaw holding in the ice baths (in which all the ice had melted) measured 51F-55F and were freshly iced-down to rechill. Repeat violation under Official Notice 2S21003996 issued 02 JUL 2024: the person in charge was warned of possible Notice Of Intent to Suspend the Permit for continuing non-compliance.
14-601.11(C) Keep nonfood contact surfaces of equipment (interiors of refrigeration units and cooking equipment, exteriors of equipment, storage shelves, etc.) free of an accumulation of dust, dirt, food residue, and other debris./ Hand prints and food residues on the door handles of equipment and push-button controls (evidence of possible missed glove discards/handwashings). Underside of the shelf over the sandwich make line is heavily soiled with food particles and residues. The can opener apparatus and its worktable base need to be cleaned.
14-904.11 Prevent contamination of food and mouth contact surfaces of single-service and single-use articles when handling, displaying and dispensing./ Unwrapped stacks of take-out cup lids on the self-service counter: keep the lids in the original wrap or stock them in the lid dispenser that is provided.
16-301.14 Post a sign at all handsinks that notifies employees to wash hands./ Replace the missing handwashing sign at the handsink in the warewashing area.
15-501.116 Clean the dumpster and the waste grease receptacle at a frequency necessary to prevent accumulation of soil or becoming attractants for pests.
26-501.12 Clean facilities (floors, walls, ceilings, ceiling/wall vent covers, fixtures, etc.) as often as necessary to maintain cleanliness./ The floors under and behind equipment in the ice machine and drive-thru areas, under the service counter, and in the broom closet are all soil with accumulated and impacted, soils, wastes, and debris.
