53-501.16(A)(1) Maintain TCS food at 135 F or above./// Fried chicken (109F) in the hot holding cabinet and grilled chicken (125F) in the make table cooler. Discussed using time as a control with the PIC instead of temperature for fried foods. Grilled chicken was recently cooked and put in the make table cooler, instructed PIC not to put hot food into the make table cooler to bring down temperature. Instructed PIC to put in the WI cooler or use an ice bath.-- COS, PIC use an ice bath for grill chicken
43-501.17(A) Properly date mark all TCS food prepared in-house, when held for more than 24 hours, with the preparation date and date of discard—not to exceed 7 days including the date of preparation. ///Mac n cheese, rice mixture and other TCS foods stored in the WI cooler wasn't date marked. PIC states that all items were made earlier in the week.-- COS, PIC labeled containers.
13-501.13 (E) Remove ROP packaged fish from package prior to thawing under refrigeration or immediately after thawing under running water./// Several packages of fish sitting in ice in a black container did not have the seal broken. Educated PIC about how important it is to break the seal on those packages.
13-307.11 Store raw animal foods with higher required cooking temperatures below those with lower required cooking temperatures. (preventive)/// Order of food was found stored in the RI cooler Eggs, beef, and pork. Instructed PIC the reason for putting the foods with the lowest internal cooking temperature above the ones with higher.
