53-306.11 Except for whole, raw fruits that are intended for peeling by the consumer before consumption, such as bananas and oranges, protect washed, ready-to-eat fruit on display, such as apples, grapes, pears, and nectarines from contamination by the use of packaging, food guards, display cases, or other effective means./ Unwrapped, ready-to-eat apples found offered from an open bowl on the self-service breakfast counter were removed for rewashing during the inspection.
