53-501.16 (A)(2) Maintain TCS food at 41 F or below. // The following TCS foods were out of temperature in the RI cooler across from flat top/grill area: raw salmon, raw chicken, raw hamburger patties, shredded cheese, torn spinach leaves, hot dog weiners, sausage bites, and sliced tomatoes (47F - 49F). Ambient temperature cooler was 46.2F. COS. Salmon, chicken, sausage bites, hot dog weiners, torn spinach, sliced tomatoes, and hamburger patties were moved to WI cooler to regain proper cold holding temperature. Shredded cheese was discarded.
13-501.13 (E) Remove ROP packaged fish from package prior to thawing under refrigeration or immediately after thawing under running water. // ROP packages of thawed Salmon were stored in the RI cooler without slits or being removed from packaging.
14-602.13 Clean non-food contact surfaces of equipment as often as necessary to prevent accumulation of residue. // Upper edges of ice machine have black residue. Shake mixer has old food residue on underside of the upper portion of the machine. Ice cream freezer on front prep table has ice accumulation.
14-903.11 Store clean equipment and utensils in a clean, dry location where they are not exposed to potential contamination. // Industrial fan with dust accumulation was stored on top shelf of wire racks, above the clean utensils. COS. Fan was moved to bottom shelf. 4-903.11 Store clean equipment and utensils covered or inverted. // Ceramic plates next to fryer are stored upright. Ceramic coffee cups next to milk RI cooler are stored upright.
17-209.11 Store personal care and other non-toxic items away from food, utensils, equipment, linens and single service/single use articles. // Employee coat was stored next to single use to-go lids (over prep area). COS. Coat was removed.
