53-501.16 (A)(2) Maintain TCS food at 41°F or below. / Pouches of raw chicken were placed in a cooler that was unplugged. One package of chicken was 45°F. / That pkg was discarded and electricity was restored to the cooler. All chicken pouches were removed, most were frozen or were 35°F, and moved to a walk in cooler. The cooler was 39°F. The cooler was unplugged.
14-602.13 Clean non-food contact surfaces of equipment as often as necessary to prevent accumulation of residue. Cooler lid handles and most interriors of the coolers were dirty.
14-402.11 Maintain all fixed sinks and fixed equipment exposed to spillage or seepage so that they are sealed to adjoining walls or equipment. Veg. sink was not sealed to the wall.
15-501.115 Clean the refuse storage area as often as necessary to maintain cleanliness. All manner of debris and ants were in the container area.
26-501.12 Clean facilities (floors, walls, ceilings, ceiling/wall vent covers, fixtures, etc.) as often as necessary to maintain cleanliness. Clean the walk in cooler floor.
