53-501.16 (A)(2) Maintain TCS food at 41 F or below. // The following TCS foods were out of temperature in the WI cooler: raw steaks, raw gound beef patties, raw ROP salmon fillets, pan of cooked rice, grilled chicken strips, pan of chicken gumbo, pan of pulled pork, bag soft blue cheese crumbles and sliced provolone cheese (53F - 58F). Ambient temperature of WI cooler is 60.8F. COS. All items were discarded. Freezer door has been opened to help facilitate keeping WI cooler to proper cold holding temperature until repairs are completed.
43-603.11 Inform consumers by way of a disclosure and reminder by denoting with an asterisk on the menu that raw or undercooked animal foods may increase the risk of foodborne illness. // Menu does not have consumer advisory for ribeye steaks that can be "grilled to order".
13-302.11 Store food wrapped, in packages or in covered containers to prevent contamination. // Apples at breakfast bar area are not wrapped or have utensil to prevent potential contamination. 3-306.12 Protect condiments from contamination by using appropriate dispensers, containers, protective covers at food displays, appropriate utensils, or individual packaging. // Containers of brown sugar, granola, and dried cranberries at the breakfast line are not covered.
14-601.11(C) Keep nonfood contact surfaces of equipment free of an accumulation of dust, dirt, food residue, and other debris. // Gaskets on the RI cooler units have black residue and old food debris. Outer portion of beverage nozzle and the holder have black residue. White plastic baffle on ice machine has black residue.
14-204.112 Provide appropriate, readily accessible thermometers for all make tables, coolers and hot holding units. // No ambient temperature thermometer for RI cooler drawers under the flat-top or the RI cooler adjacent to the flat-top.
14-501.14 Clean dish machine and attached equipment. // Interior of dish machine has lime scale build-up/residue.
16-301.14 Post sign at all hand sinks that notifies employees to wash hands. // No handwashing signage at handsink in the bar area.
15-501.113 Keep dumpster doors and lids closed. // Dumpster doors were open. COS.
