Communication of the policy to employees must be verifiable./ Verification of communication of a minimum required health policy to on duty employees could not be provided.
2 2-303.11 Cease wearing jewelry on the arms and hands (other than a plain ring) while preparing food./ One of the foodhandlers is wearing multiple bracelets and wristbands.
44-301.11 Use only equipment with the capacity to heat food to 165 F within 2 hours for reheating./ Chili 89F-94 reheating 1 hour on the buffet warmer was transferred to the grill and reheated to > 165F: maintain established procedure for reheating this menu item and use the grill to reheat it; verify with the food thermometer provided that 165F> is attained before loading into the buffet warmer.
14-601.11(C) Keep nonfood contact surfaces of equipment (interiors of refrigeration units and cooking equipment, exteriors of equipment, storage shelves, etc.) free of an accumulation of dust, dirt, food residue, and other debris./ The exterior of the soft-serve freezer is very dirty; cooler and freezer interiors are all soiled; moldy shelving in the WI freezer. Residue and mold build-up on the upper interior surfaces of the ice machine.
14-501.11 Provide a stopper for each sink compartment to immerse equipment and utensils for washing, rinsing, and sanitizing.
