53-501.16 (A)(2) Maintain TCS food at 41 F or below./// Recently prepared raw seasonsed chicken thighs, seasoned burgers, and ribeye steaks stored in the deli case cooler were out of temperature (46-49F). COS. The ribeyes and some of the packages of chicken were in the cooler for approx. 3hrs and were therefore discarded. All other items were in the cooler for less than 2hrs and were therefore moved to the WI cooler to regain temperature.
44-501.19 Maintain the wash solution at 110 F or higher in a manual warewashing sink./// Employee was actively washing dishes in 76F water. COS.
