TCS foods included cooked: pasta, chicken, chicken fajitas, vegetable mix, and rice. TCS foods were voluntarily discarded.
1ADPH 420-3-22-.03(1)(a) Cease the sale of commercially processed TCS food requiring refrigeration when past the date limit placed by the manufacturer or packager. // Low fat milk cartons, and a case of lowfat buttermilk were stored in R.I. cooler beyond the manufacturer date limit. Low fat milk cartons and case of buttermilk were voluntarily discarded.
14-601.11(C) Keep nonfood contact surfaces of equipment (interiors of refrigeration units and cooking equipment, exteriors of equipment, storage shelves, etc.) free of an accumulation of dust, dirt, food residue, and other debris. // Debris, dirt, and food residue were observed in the R.I. cooler, and the R.I. freezer.

16-501.114 Maintain premises free of items that are unnecessary to the operation or maintenance of the establishment, such as equipment that is nonfunctional or no longer used. // Dishwash machinery was nonfunctional and no longer used.
